In order to produce this type of pasta the oldest grain cereals is used: Organic Spelt, a type of grain that contains gluten that is easy to absorb and digest.

Spelt pasta has an unusually good taste and is a valid alternative for those who have difficulty digesting the gluten found in normal pasta.
